In the Cafe with Chef Jose: Mixed Berries Salad with Strawberry Balsamic Vinaigrette

Here’s a great recipe for a springtime salad with berries and a fresh vinaigrette.

INGREDIENTS:

SALAD:
1 lb Mixed Greens
1/2 pint basket  Fresh Strawberries
1/2 pint basket Fresh Blueberries
1/2 pint basket Fresh Blackberries
1 cup Gorgonzola Cheese
2 oz Toasted Almonds

STRAWBERRY BALSAMIC VINAIGRETTE:
1 1/2 cup Balsamic Vinegar (Chef recommends Sonoma Vinegar Works)
1/2 cup Extra Virgin Olive Oil
1/2 cup Canola Oil
1 teaspoon Salt
1 teaspoon Black Pepper
1 teaspoon Chopped Garlic
1 teaspoon Chopped Oregano
1 small Roasted Red Onion*
6 large or 8 regular Strawberries

serves 4

INSTRUCTIONS:

SALAD:
Mix berries and put on top of bed of mixed greens. Crumble gorgonzola cheese on top and sprinkle with toasted almonds.

STRAWBERRY BALSAMIC VINAIGRETTE:
Put all ingredients except oil in a blender.
Blend on low and slowly stream in oils until incorporated well.
