In the Cafe with Chef Jose: Citrus Salad Cups

Here’s a simple recipe for a light salad cup appetizer.

Salad Bites

1 Teaspoon Dill
1/2 Teaspoon Garlic
1 Orange, juiced
1/2 Cup 75/25 Blended Oil
1/4 Cup Red Wine Vinegar
Dash of Salt and Pepper

1 Cara Cara Orange – peeled and segmented
2 Tablespoons Toasted Almonds
2 Tablespoons Feta Cheese
1 Head Romaine Lettuce

Put all the ingredients, except the oil, in a blender. Blend on low and stream in oil until incorporated.
